VINEYARDS
The grapes for Montes Wings come from our Apalta estate in the Colchagua Valley, planted on steep slopes 200 meters above the valley floor. The granite-based soils contain clay and offer excellent drainage. The vineyards face southwest, allowing for cooler summer conditions and slower ripening. With diverse soil profiles, including river-influenced and alluvial zones, vines are planted at 5,555 plants/ha and trained using the Double Guyot system. Yield is around 3.5–4.0 tons/ha. Leaf thinning is done in January to expose the grapes and reduce green aromas (pyrazines).
HARVEST
Harvest took place from May 1–15. Despite low rainfall in 2019, vines developed well. Spring frosts did not affect red varieties. Warm summer temperatures brought an earlier harvest than usual, with healthy, ripe grapes showing excellent varietal character.
VINIFICATION
Hand-harvested grapes were carefully sorted, then cold macerated at 10°C for 5–7 days. Fermentation lasted 12–15 days at 26°–29°C. Post-fermentation maceration was adjusted based on daily tastings. The wine was then aged 16 months in French oak barrels (80% new, 20% used).
